CAA150烘焙和糕点基础
本课程向学生介绍制作基本烘焙食品的准备和程序, 发酵面团, 馅饼, 还有层压糕点. Specific topics include knowledge of food science as it applies to baking; the understanding and demonstration of basic methodology of mixing and baking procedures; the function of ingredients commonly used in baking; and the calculating of basic math formulas to assist in the production of baked goods. 完成后,学生将能够使用各种方法准备各种烘焙产品.
